How is it that three-word phrases are capable of conjuring up so much emotion?

“I love you” “I want you” “I owe you” “Go for it” “Dreams come true” “You are beautiful” “Nothing is impossible” “I respect you” “Never look back” “Please forgive me” “I miss you” “This will pass” “Life goes on” “I am pregnant!” “Prove them wrong” “Always be yourself” “All is well” “Who wants dessert?” “Home sweet home” “There is hope”

But the three-word phrase that I absolutely dread, “What’s for dinner?”

Steam Blowing Out of My Ears…

How those three words make me want to scream. Those three words have kept me up at night. Honestly, I draw an image in my brain of an old chicken running around without a head. I go crazy trying to come up with something new. I mean, how many times can you make chicken in a week?

This is how it goes. While we are eating dinner, I ask everyone what they want for tomorrow night’s dinner. They give me their suggestions, but most nights nothing is firm.

Later in the evening, my husband and I sit on the sofa mindlessly watching TV. Laptops on our laps. Conversation about what we are surfing, buying crap off the internet we don’t need, or talking about our day.

“Babe, what should I make for dinner?”

His first response is usually, “how about BLT’s so you don’t have to cook.”

That’s when I tell him that I made BLT’s last week.

“You could do chicken on the grill and veggies in the oven.”

That’s when I remind him that our grill died.

“How about a nice piece of fish?”

I tell him it would work for some of us, but not all of us.

And finally, he says, “how about if I pick-up something?”

GREAT ANSWER!!!

Seriously though, I really enjoy cooking. I like working with recipes and making them my own. There is one recipe I will never change. Ina Garten makes THE BEST chicken pot pie recipe. I do however, swap out real pie crust with store-bought pie crust. I am terribly afraid to make homemade crust.

I have to tell you about a recipe I tried, several years ago. It was a recipe on how to make a healthier chili. Making it with lean ground turkey instead of ground beef. Using cannellini beans in place of kidney beans, and if you can believe this, it called for caraway seeds. In my brilliant delusional mind, I decided to double the recipe because I honestly thought my chicks would devour it. They loved chili, they would go crazy over this… They were kind at first.

“Wow mom, lots of flavor”… “the beans are creamy”… and then the comments turned…. “mom, what the heck? Caraway seeds… what were you thinking?”

The last comment was the best. “Why is it mom, that when you make something really awesome, there is never enough? But when you make something really awful, you always make too much?”

Genie in Bottle

Don’t you wish you could buy a Genie in a Bottle? Rub the bottle and ‘poof’ out comes a genie granting you a wish. You know what I would wish for? 365 recipes so I would always know what’s for dinner.
